Some people still claim that decaffeinated coffee has a completely different flavour from classic coffee, being more acidic and lighter.
However, this happened during the first caffeine extraction tests, when chemical solvents and high temperatures were used, which completely alter the flavour of this drink.
In recent years, thanks to the much simpler and more environmentally-friendly extraction methods, the characteristics of coffee beans are no longer altered, and we can actually dissolve the caffeine without distorting the authentic flavour of coffee.
